I feel like posting a recipe for these is like posting a recipe for a sandwhich. It seems silly, because really the interesting part for me was in cooking each element that went into these tasty lettuce wraps. However, ask and you shall receive, my friends! These wraps are gluten free and can easily be modified to be vegetarian or vegan. Original links to the recipes I use are below… enjoy!
Ingredients:
- Roasted chicken (Here is an amazing resource on roasting a chicken if, like me, this is your first time: http://www.youtube.com/watch?v=HunVJbCfiBI)
- Garlic hummus (I make my own using this recipe from Gluten Free Girl and the Chef)
- Spanakorizo aka Greek spinach rice (Recipe is here. I cut out the feta since there is some in the cucumber salad, I also substituted the parsley & dill for Capitol Hill seasoning from the Savory Spice Shop that I had in my pantry)
- Cucumber Salad (I make mine similar to this: http://simplyrecipes.com/recipes/dads_greek_salad/)
- Romaine lettuce hearts
- Feta (optional)
Smear a spoonful of hummus along the spine of a leaf of romaine lettuce. Layer with cucumber salad, spanakorizo, and chicken. Garnish with feta if you’d like!
